FIVE Chip Cookies~ Yummy!


My mom made homemade cookies every week when I was growing up. She is the reason everyone thinks I'm a good cook. She finds and grew up with the best recipes. Our family has published two cookbooks for our family and friends. However this recipe is from a cookbook called the "BEST OF COUNTRY Cookies" cookbook from Country Magazine that my mom gave me one year and these are my boys favorite cookie. They are pretty darn good! Thanks Mom!

Five Chip Cookies

In mixing bowl, cream together:
1 cup butter or margarine, softened
1 cup sugar
1 cup peanut butter
2/3 c. brown sugar

Add:
2 eggs
1 tsp. vanilla

Mix well.

Combine 2 cups flour with 1 cup of quick oats, 2 tsp. baking soda and 1/2 tsp. salt.
Gradually add to the creamed mixture.

Combine 2/3 cup each: semi-sweet chocolate chips, milk chocolate chips, white chocolate chips, peanut butter chips and butterscotch chips~stir chips with a spoon. Then stir into batter until chips are mixed in. Refrigerate for 1 hour.

Drop by cookie scoop onto cookie sheet. One scoop for smaller cookies and two scoops slightly mashed together for a larger cookie. Bake at 350 degrees for 10 min. until slightly browned. Cool for a minute or two on cookie sheet before removing to wire rack. Makes about 4 dozen cookies.

I'm making these for my son, Dallas when he comes to visit on Thursday. Shhh, don't tell him!! He will be surprised and happy!!
